Ive had a hundred and one things to get done today, and yet i was still able to find the time to bake these delicious Honey and Raisin Oatmeal cookies! ..And thats because they are honestly the easiest but tastiest cookies ever! Dave and Shalev just gobble these up in no time... example; i baked the last batch on Saturday and on Sunday night i had 1 left in the cookie jar. hmmm. Mum is arriving tonight so just had to have a few more in the jar for our cup 'o' tea breaks together! Havent seen mum since this time last year! SO it will be such a blessing having her here again.
Recipe below...
Honey and Raisin Oatmeal Cookies:
3 Tbsp butter- room temp
1/2 cup brown sugar
1/4 cup honey
1 egg
1 Tbsp water
1/2 cup flour
1/2 tsp salt
1 tsp cinnamon
1/4 tsp baking soda
1 1/2 rolled oats
Raisins or any dried fruit
Preheat oven to 180.C. Grease tray.
Beat together butter, brown sugar, honey, egg and water thoroughly. Sift dry ingredients, then stir in the oats. Add the dry ingredients to the wet and mix. Add dried fruit.
Drop heaping teaspoonfuls onto cookie sheet. Bake 12 minutes. Cool on wire rack!
